When you break them to harvest the ice, the slab border will reform the area with new source blocks. With the perimeter as source blocks, the whole area will fill with sources and those will freeze. What I'm talking is replace the wood border with a top slab of choice and waterlog all the slabs. We are having some kind of disconnect here. The ice farm is built at about Y=100 in a Mountain biome. The ice will start forming on the spruce logs and freeze towards the centre because the logs are three blocks away from the sea lanterns if the logs were two blocks away the ice farm would not work. Spruce wood is used throughout the farm, with birch wood half slabs submerged in water to provide the water sources. The sea lanterns light up the area to stop nasties from spawning. Like the farm described by Xisuma, the farm is made from wood to simplify the harvesting of ice. Thus, ice farms do not need to protect water sources from freezing if they use waterlogged blocks like half slabs. In 1.13, waterlogged blocks do not freeze but are valid water sources. Sometimes simple farms are the best ones to build. I have simplified the design using 1.13 water mechanics. This ice farm was inspired by this design posted by /u/Xisuma based on a tweet by Phuyu.
